1. Tom yum soup

No coconut milk, no oil, very little sugar. It is the dish to order when you want something warming that will not weigh you down. 2. Som tum (green papaya salad)

Shredded unripe papaya pounded with lime, chili, garlic, tomato and long beans. Crunchy, sour, spicy and almost entirely vegetables. It is one of the lowest-calorie dishes in Thai cuisine and one of the most refreshing things you can eat in the Las Vegas heat.

3. Larb

A warm herb salad of minced protein tossed with lime, chili, shallot, mint and toasted rice powder. Very high protein, very low fat, no sauce to speak of. Ask for a tofu or plant-based version and it becomes one of the best plant-protein plates on the menu.

4. Vegetable stir-fries with tofu

Pad pak (mixed vegetable stir-fry), ginger stir-fry and basil stir-fry are wok-cooked in a small amount of oil with a savory sauce, which puts them well below anything fried. Add tofu and you get a complete meal that is mostly vegetables and protein. 5. Steamed jasmine rice instead of fried rice

Not glamorous, but it is the single easiest swap on a Thai menu. Fried rice is cooked in oil; steamed jasmine rice is not. Same satisfaction, meaningfully lighter plate.
